Washing Glassware at the Bar
Equipment & set up
An area for scraping or rising food into garbage container
Drain boards to hold both soiled and clean items
A thermometer in each sink to measure Water temperature
A clock with the second hand to measure the amount of times are immersed in the sanitizer solutions
Three – compartment sink
Before washing Items, Clean & Sanitize each sink and all work surfaces
The most effective system for cleaning beer glasses is the three- compartment Sink
Sink 1 : This sink has an overflow pipe with a funnel strainer in which residue from beer glasses poured . this sink is filled with warm water and glass cleaner
Sink 2 : this is the rinsing compartment , filled with cool water . A slow but steady stream of cool water should be allowed to run into this compartment throughout the washing operations.
Sink 3 : This is sanitizer. Filled with clean cool water . where required or preferred , this sink contain a carefully measured amount of sterilizing compound. Make sure you follow all this rules
Washing procedure
Follow these procedure to properly clean and sanitize all bar Glassware
Step 1 : rinse, scrape, or soak all items before washing
Step 2 : wash items in the first sink in a detergent solution. Water temperature should be at least 110 Degree Fahrenheit . use a brush , cloth or nylon scrubber to loosen remaining soil and food particles
Replace detergent solution when suds are gone or water is dirty. If water drops below 75 degree Fahrenheit, change immediately.
Step 3 ; Immerse or spray – rinse items in second sink. Water temperature should be at least 110 degree Fahrenheit . remove all traces of food and detergent . if using immersion method , replace water when it become cloudy or dirty
Step 4 : Immerse items in the third sink in a hot water or a sanitize solution . if the HOT WATER IMMERSION method is used . the water temperature must be at at least 180degree Fahrenheit . items must be immersed for 30 seconds . if the chemical sanitizing method is used , the sanitize must be mixed at the proper solutions and correct immersion time.
NOTE : Do not add excessive chemical to sanitize solution to compensate for drop in water temperature or dirty nature of water .Change Wash ,Rinse Sanitize sinks regularly to ensure proper cleaning and sanitizes of equipment . to ensure an accurate and effective use of chemical always use the proper test strip for your sanitizing solution
Step 5; Allow all items to Air Dry.
