How to became a Server

 Floor plan and Table Numbers



When working the Host Position , your goal is to provide each guest with the best seat in the house you are the one who greets the guest as they arrives record the name of the guest if the restaurant is on wait . escort the guest to the table , suggest appetizers hand crafted beverages monitor the tables, and thank the guest for their business as they leave 


Using the floor plan 

In order to do your job, it is essential that you know the floor plan and each tables number . your manager will give you the copy of the floor  plan that shows the layout of the tables and identifies a number for each tables in the restaurant

Take the time to memorize the table number

A laminated copy of the floor plan kept at host desk . this plan shows the arrangement of tables in the dining room and bar areas. Each tables is identified with the a table Number. You will also see thick black lines grouping 6-8 tables into sections these sections represent Zones. each server assigned a Zone as their primary area of Responsibility

Server will work with their Zone mate to serve the guest and perform side work duties throughout the shift

Using Seating Grid

Using Seating grid will help keep the restaurant organised and running smoothly each shift. This tool ensure a fair distribution of tables among the servers while providing the guest with the best seat in the house. Since the pace of the dining room is set by the speed with which the guest is seated . it is very important that you evenly seat tables throughout the shift.

Here is how  to use the floor plan and seating grid to seat the guests and keep the dining room running smoothly.

After you greet the guest , find out their seating preference ( smoking/ Non smoking,  table/ booth)

Check the seating grid . it tell you which zone should be seated next

Mark the tables on the floor  plan with an X and record the zone seated on the seating Grid

Using the seating grid , go down the list to the next Zone to be seated .servers will take turns alternating tables in their zone 

After you seat the guest and return to the host stand look around . if you see any empty tables, be certain that your  floor plan is updated correctly.

Be prepared and know which zone is supposed to be seated next

Seating Grid 

Notice's that all the server's name and zone are listed on the left of the grid . tables should be rotated by zones , not server . As a new party arrives , you systematically move down the list of zones. Place the number of guests in each party in the box. After you complete one full rotation of all of the zones , you begin the process again

This numbering system will help you to keep each zone with approximately the same number of parties and hopefully the same total number of guest . it also helps you quickly identify which zone should be seated next.

Its all About A Positive Attitude

 

A positive attitude is the primary and most important part of being a guest relations expert.

Always have a warm smile while taking to guest on the phone.  

Always Smile and make eye contact.

Always open the door for the guests.

Always say hello and good bye to every guest , never  let guest leaves without speaking to them. Invite them back.

Be attentive to the needs and special request of each guest.

Its everyone’s responsibility to keep  the bar/ restaurant neat and clean.

Remember ! guest can see everything you do . you should always stand tall and act professionally - no leaning ,never have personal conversation with other team mate , you should not drink ,eat or chew gum in the dining room , you should not put pens in your mouth or in ear. act as if you are on stage and our guest are watching you perform. be Friendly and act professionally at all times.
