Drink types and Portions
It will be easier to learn all the different drinks if you understand that many are made using the similar procedure with only an ingredient or two changed. However, you will still follow the ame consistent portioning rules . Please refer to the recipe Manual for specific drink portions .

Spirits.
Types of spirits.
Scotch : A product of Scotland , scotch whisky comes in two styles : blended and single malt
Canadian whisky : a blend of light whiskies made from rye, corn, wheat and barley malt.
Bourbon : A product of Kentucky. United states federal Regulations specify that to be called bourbon a whisky must have at least 51percent corn grain and aged only new oak barrels .
Tennessee whisky : A product of Tennessee . similar to Kentucky Bourbon ; however , tenessee sour mash is filtered through Charcoal.
Gin : This neutral spirit is distilled twice , with the second distillation including the essence of juniper berry.
Rum : A product of the Caribbean . Puerto Rican rum is made with sugar cane, which gives it a light color, Jamaican rum is made from molasses.
Vodka : This spirit is produced in many places around the world .all vodkas are colorless and odorless because they are filtered through hardwood . Flavored vodka are created during the distillation process . examples includes pepper, lemon etc.
Tequila: A product from Mexico. True tequila is made from the heart of the blue species of the Agaves Plant.
Cognac and Brandy : All Cognac is brandy ; but not all brandy is Cognac . It is considered the most famous and prestigious of brandies and is only produced in the cognac region of France. Cognac is coded according to th quality : V = Very , S= Super, O= old and P= Pale
Fruit Garnish
When you use fruit to garnish a drink, use only the freshest and coiceest fruit available. To extract more juice from citrus fruits. Slightly warm the fruit under warm running water . then roll the fruit from side to side with the palm of the hand . this action separates the juice from pulp.
Fruits Should be cut to proper size with a clean , sharp knife and on a clean cutting board- not the bar top. In addition , remember to use a cutting gloves ant time you use knife.
How much Fruit do I cut
Fill Tray with the freshly cut fruits ( lemon, lime , oranges, etc) and cover them immediately to protect them from the dust, oxidation and insects. Cherries , olives should be covered and stored in their own juices to retain freshness and visual appeal. Be sure to refrigerate cherries . olives, mint and celery. Fruits is cut to order for all beverages.
